Easy Weeknight Dinners

School’s starting everywhere, we’re all busy, rushing and running around…

So, on this week’s Mommy Monday I want to share some of my favorite Quick and Easy Weeknight Meals with you.

I’m going to start off with one of MY recipes, because it’s mine, but also because it is one of my favorite easy comfort food meals.

cpcadMy Crock Pot Chicken and Dumplings. If you are a fellow Momma, and you don’t own a crock pot- drop everything and go get one. It will become your BFF on busy days. Prep everything in the morning, or sometimes the night before. And later when dinner time rolls around, dinner is ready…and there’s hardly any mess to clean up!

Sticking with the crock pot theme:

I made this Blushing Pork Loin from Feaston the other night, and it was delicious! And since peaches are in season right now, it was made even better by the addition of fresh peaches instead of canned.

If you’re on a health kick, we tried this awhile back and it was filling and delicious (and also can be Whole30 friendly).

Artichoke Chicken Thighs by Shazzy’s Sass. I’m a big fan of any meal that can all be made in one pot, and you have a healthy and delicious meal in under an hour.

And if you’re a carb lover like myself:

This Creamy Garlic Pasta by Nummies  is another one-pot hit. Creamy and delicious and rivals any pasta from your favorite Italian eatery. Add some salad and bread and have a great tasting dinner your whole family will love.

Soup is another one of my favorite week night meals. And this is one of my absolute favorites:

Broccoli-Cheese Soup from the Pioneer Woman. It’s SO good. She is one of my favorite recipe resources, and she doesn’t disappoint with this decadent version of cheddar broccoli soup. We usually eat this weekly in the colder months.
