Last week I shared some ways to fancy up your Holiday cupcakes<\/a>, and now I\u2019m back with a fun, easy breakfast that\u2019s perfect for special days. They only take few minutes and they\u2019re especially perfect for kiddos on Valentine\u2019s day. Strawberry Donut Muffins- or any flavor really, are so EASY to make and a nice change from an ordinary muffin.<\/p>\n

All you really NEED are the ingredients to make muffins- I find these packets from the grocery store especially convenient, and a donut pan<\/a>. <\/p>\n

Mix up your milk (I used oat milk) and muffin mix according to your package directions. I also added in a tiny bit of food coloring gel to make them pinker- and next time I need to go a little heavier on the color. {Pro tip- mix it in the milk before you stir it into your muffin mix, so you don\u2019t overwork your mixture.} Or just leave the coloring out. <\/p>\n

Make sure you spray your donut pans so they don\u2019t stick. And then to make this part easier, I transfer the muffin mix to a plastic baggie and cut off the tip so I can evenly distribute the mixture in the donut pan. <\/p>\n

See how much more uniform it is getting the batter in the pan that way? A packet of muffin mix made the perfect amount to fill 6 donuts. Now pop your donut muffins into the oven- they\u2019ll take about 10 minutes to bake up. Just make sure to check on them so they don\u2019t burn.<\/p>\n

You just want them lightly golden and springy to the touch. <\/p>\n

Let them cool in the pan for about 5 mins and go ahead and pop them out and set them on a cooling rack. This will keep them from getting soggy on the bottoms and help them to cool much quicker.<\/p>\n

Now you want to make a glaze. I made a simple powdered sugar glaze. Measure out a small amount of powdered sugar, 1\/2 cup or so. Then add in milk about 1\/2 tbsp at a time and keep mixing until you get the consistency that you want. I also added in vanilla for flavor- you could add a lot of different types of flavorings for this- and a tiny bit of the food color gel.<\/p>\n
