Meal Plan Monday – Mrs. Bishop


I’m getting this up super late, but- LIFE.

Also, I’m just going to share the links to the recipes I’m using instead of posting the pictures, because lately so many bloggers are getting into trouble for sharing photos, even if they’re giving credit to the original poster. Argh.

But, I digress…here’s my Low FODMAP friendly Meal Plan for the week:

Meatless Monday: Cheesy Baked Quinoa and Spinach from Delicious as it Looks

Taco Tuesday: Sheet Pan Fajitas from Treble in the Kitchen (served with corn tortillas)

Wednesday: Shepherd’s Pie Baked Potatoes from Cupcakes and Kale Chips 

I LOVE that I found a way to enjoy Shepherd’s Pie that fits my dietary restrictions!

Thursday:BRINNER (breakfast for dinner) Frittatas with leftover veggies in them (a great way to use up veggies, rice, or any leftovers, really!)

Friday: Baked Tilapia and Veggies

I just salt and pepper my frozen tilapia filets, and stick some lemon slices on top and bake for about 20 minutes. Toss some steam-able veggies in the microwave, and you’ve got a quick and easy weeknight meal. My 5 year old even enjoys this meal- WINNING!

I’ve also decided to commit to doing big Sunday dinners. Yesterday I made a delish Low FODMAP friendly pot roast. I’m trying to start and implement traditions in our new home. What are your favorite Sunday Dinner recipes? I need inspiration!
