The Easiest 2 Ingredient Candy Recipe- Salted Caramel Peanut Clusters
We’re known in my family for our Christmas candy. We get together and make batch upon batch of fudge. Dip hundreds of peanut butter and coconut balls. Roll truffles. Crush candy canes. The whole shebang. We’re expected to bring these candies to every party and function we attend. And by the end of the season we usually run out!
I put together a ridiculously easy Christmas candy (or anytime of year treat!) that I can easily replenish my candy trays with- without breaking the bank, or spending hours in the kitchen.
Salted Caramel Peanut Clusters.
The best part? This recipe only takes 2 ingredients!
You only need lightly salted peanuts and salted caramel chips. This time I used the generic chips- which are fine. But, I’m not gonna lie, the name brand ‘sea salt caramel’ chips were a little better. Slightly.
All you need to do is melt your chips. You can do this in a double boiler, or this time I just used my handy sous chef Mike. AKA the microwave. Just pop them in for 15-30 seconds at a time at 50% power, stirring between each time. These chips melt beautifully, I haven’t had any issues with either brand.
Stir in your peanuts. I used a whole can (12oz), plus a little extra. Just about a handful more. Just make sure they stick together nicely without being too sticky.
Drop by tablespoonfuls and make sure they stay together. Then let them set up. That’s it!
Pop them into a container with a lid and they’ll last you quite a while. If you can keep from eating them all yourself.
They’re the perfect sweet and salty treat to set out for any of your Holiday parties! Next time I’m going to try them with cashews.
